We only need a unipolar positive DC voltage.
Can the IRA2153SD work with a simple two-winding transformer and a full-bridge rectifier?
What are the drawbacks?
Is there a different Infineon device that would work better in this configuration, such as a full-bridge gate-driver?

Yes. The IC biasing conditions including the VCC should be met with the rectifier. See below application notes:
